For years, I ate an egg or two for breakfast almost every day. A few months ago, I started drinking a protein and fruit smoothie in the morning instead, and while I like it, I also found myself really missing those eggs. I still bought them at the market out of habit, but then they’d just sit there in my fridge. I didn’t want to waste them, so gradually, I started creating healthy egg recipes: adding hard-boiled ones to salads, scrambling a few up for burritos, cracking them onto a pizza before popping the pie in the oven. It changed the way I think of eggs. They really aren’t just for breakfast.

It’s a good thing too because eggs are so good for you. One large egg has just 77 calories, 5 grams of fat, and 6 grams of protein. Eating only the whites removes all of the fat and cholesterol, however, you miss out on all of the other nutritional benefits.
